Description

Ingredients
1 cup of sugar
1 cup of brown sugar
4 eggs
1/2 cup of vegetable oil
1/2 cup of melted butter
1 1/2 cups of self-rising flour
1 teaspoon of vanilla
2 cups of chopped pecans
Instructions
-
Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and set it aside.
-
Mix Wet Ingredients: In a large mixing bowl, combine the sugar, brown sugar, eggs, vegetable oil, and melted butter. Use a hand mixer or whisk to blend the ingredients until smooth and fully incorporated.
-
Add Dry Ingredients: Gradually add the self-rising flour to the wet mixture, stirring gently to avoid overmixing. Once the flour is incorporated, add the vanilla extract and mix until just combined.
-
Fold in Pecans: Gently fold in the chopped pecans using a spatula, ensuring they are evenly distributed throughout the batter.
-
Pour into Pan: Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.
-
Bake: Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
-
Cool: Once baked, remove the loaf from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing.
Notes
Ensure your self-rising flour is fresh for the best results. If you don’t have self-rising flour, you can make your own by combining 1 1/2 cups of all-purpose flour with 2 1/4 teaspoons of baking powder and 3/4 teaspoon of salt.
Avoid overmixing the batter to keep the bread light and tender.
