Ingredients
- 2 tablespoons graham cracker crumbs
- 1 (8 ounce) package cream cheese, softened
- ½ cup confectioners’ sugar
- 2 teaspoons vanilla extract
- 12 large fresh strawberries
- 2 (1 ounce) squares semisweet chocolate (Optional)
- 1 teaspoon canola oil (Optional)
Instructions
Prepare the strawberries:
Rinse strawberries gently under cold water and pat completely dry.
Remove the green tops and carefully hollow out the center of each strawberry using a small knife or spoon, creating space for the filling. Set aside.
Make the cheesecake filling:
In a mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the confectioners’ sugar and vanilla extract.
Beat until fully combined and fluffy, scraping down the sides as needed.
Add graham cracker flavor:
Stir the graham cracker crumbs into the cheesecake mixture until evenly distributed.
Fill the strawberries:
Spoon or pipe the cheesecake mixture into each hollowed strawberry, slightly mounding the filling on top for a bakery-style look.
Optional chocolate drizzle:
Melt the semisweet chocolate with the canola oil in a microwave-safe bowl in 15-second intervals, stirring until smooth.
Drizzle the melted chocolate over the filled strawberries.
Chill before serving:
Refrigerate the cheesecake bites for at least 30 minutes to allow the filling to set.
