Ingredients
Strawberry Brownies
- 15.25 oz (425 g) Box Strawberry Cake Mix
- 2 Large Free Range Eggs
- ⅔ Cup (160 ml) Vegetable Oil or Unsalted Butter
- 1 Cup (180 g) White Chocolate Chips
For the Glaze
- 2 tbsp Strawberry Preserve
- 1 Cup (120 g) Powdered Sugar
- 2 tbsp Heavy Cream or Whole Milk
Instructions
Step 1: Prepare the Pan
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal. Lightly spray with nonstick spray.
Step 2: Make the Brownie Batter
In a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil (or melted butter). Mix until fully combined and thick. Fold in the white chocolate chips until evenly distributed.
Step 3: Bake
Spread the thick batter evenly into the prepared pan, smoothing the top with a spatula. Bake for 23–28 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
Step 4: Cool Completely
Remove brownies from the oven and allow them to cool completely in the pan before glazing. This ensures clean slices and a smooth glaze finish.
Step 5: Prepare the Glaze
In a small bowl, whisk together the powdered sugar, strawberry preserve, and heavy cream (or milk) until smooth and pourable. Adjust consistency if needed by adding a few drops of milk.
Step 6: Glaze the Brownies
Pour the glaze over the cooled brownies and gently spread it into an even layer. Let the glaze set for 20–30 minutes before slicing.
