Ingredients
Chicken & Seasoning:
-
2 large chicken breasts
-
Salt & pepper to taste
-
1/2 cup flour
-
1 tablespoon garlic powder
-
1 tablespoon onion powder
-
1/2 tablespoon paprika
-
1/2 teaspoon cayenne pepper (optional)
Cooking Ingredients:
-
2 tablespoons olive oil
-
2 tablespoons butter
-
1 medium-to-large onion, sliced
-
1 cup chicken broth
-
1 teaspoon Worcestershire sauce
-
1/4 cup heavy/whipping cream
Instructions
Step 1: Prepare the Chicken
-
Cut the chicken breasts in half lengthwise to create four thinner cutlets.
-
Season both sides of the chicken with salt and pepper.
Step 2: Prepare the Seasoned Flour
-
In a bowl, combine flour, garlic powder, onion powder, paprika, and cayenne pepper. Mix well.
-
Take 2 tablespoons of this seasoned flour and set it aside for later (this will be used to thicken the gravy).
Step 3: Cook the Chicken
-
Heat olive oil in a skillet over medium-high heat.
-
Dredge each piece of chicken in the seasoned flour mixture and shake off any excess.
-
Place the chicken in the hot skillet and cook for 5 minutes per side until golden brown but not fully cooked through.
-
Remove chicken from the skillet and set aside.
Step 4: Caramelize the Onions
-
Lower the heat to medium-low and add butter to the skillet.
-
Once melted, add sliced onions and cook for 15-20 minutes, stirring every couple of minutes, until they become soft and golden brown.
-
If the onions begin to burn, lower the heat slightly.
Step 5: Make the Gravy
-
Sprinkle the reserved 2 tablespoons of seasoned flour over the caramelized onions. Stir continuously and cook for about a minute.
-
Pour in the chicken broth and Worcestershire sauce while stirring constantly to dissolve the flour. Scrape up any browned bits from the bottom of the skillet.
-
Stir in the heavy cream and mix well.
Step 6: Finish Cooking the Chicken
-
Return the chicken to the skillet and let it simmer in the sauce for 5-7 minutes, or until the chicken reaches an internal temperature of 165°F and the gravy thickens.
-
Adjust salt and pepper to taste.
Step 7: Serve
-
Serve the smothered chicken over cooked rice and enjoy!
Notes
- Be sure to cook the onions slowly for the best flavor.
- Let the chicken rest for a couple of minutes before serving for juicier results.
