  • 1¼ cup brown sugar
  • ½ cup whipping cream
  • 5 tbsp butter
  • 1 tbsp vanilla extract
  • ¼ tsp salt

Instructions

Step 1: Prepare the Cookie Dough

  1. Preheat the Oven – Set your oven to 350°F and line two baking sheets with parchment paper.
  2. Mix the Wet Ingredients – In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy. Add the eggs and vanilla extract, mixing until well combined.
  3. Add the Dry Ingredients – Gradually mix in the flour, salt, baking powder, and baking soda until fully incorporated.
  4. Incorporate Graham Crackers – Slowly add 1½ cups of graham cracker crumbs to the dough, mixing just until combined. Do not overmix.

Step 2: Shape and Bake the Cookies

  1. Form the Cookies – Use a 2-inch cookie scoop to portion out the dough. Roll each dough ball in the extra ½ cup of graham cracker crumbs.
  2. Flatten the Dough – Place the dough balls onto the prepared baking sheets, spacing them apart. Gently flatten each one to about ¾-inch thick.
  3. Bake – Bake for 8-10 minutes, or until the edges turn a light golden brown.
  4. Cool the Cookies – Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 3: Make the Cream Cheese Frosting

  1. Cream the Ingredients – In a mixing bowl, beat the softened butter, cream cheese, and vanilla extract until smooth.
  2. Add the Sugar – Gradually mix in the powdered sugar until the frosting is fluffy and light.
  3. Frost the Cookies – Using a piping bag with a round tip, pipe the frosting onto the cooled cookies in a circular motion, starting from the center and working outward.

Step 4: Prepare the Caramel Topping

 

  1. Cook the Caramel – In a small saucepan over medium heat, combine the butter, brown sugar, salt, and whipping cream. Stir continuously while bringing it to a boil. Let it cook for 5-7 minutes until the sauce thickens.
  2. Add Vanilla – Remove from heat and stir in the vanilla extract. Let the caramel cool for 15-20 minutes.
  3. Drizzle Over Cookies – Once the caramel has thickened but is still pourable, drizzle it over the frosted cookies using a spoon.
  4. Set the Caramel – Let the cookies sit for 20-30 minutes before serving to allow the caramel to set.

Notes

  • If you prefer a saltier caramel, add a pinch of flaky sea salt to the drizzle.
  • Graham cracker crumbs add texture—don’t skip rolling the dough in them before baking!
