Instructions
Step 1: Prepare the Cookie Dough
- Preheat the Oven – Set your oven to 350°F and line two baking sheets with parchment paper.
- Mix the Wet Ingredients – In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy. Add the eggs and vanilla extract, mixing until well combined.
- Add the Dry Ingredients – Gradually mix in the flour, salt, baking powder, and baking soda until fully incorporated.
- Incorporate Graham Crackers – Slowly add 1½ cups of graham cracker crumbs to the dough, mixing just until combined. Do not overmix.
Step 2: Shape and Bake the Cookies
- Form the Cookies – Use a 2-inch cookie scoop to portion out the dough. Roll each dough ball in the extra ½ cup of graham cracker crumbs.
- Flatten the Dough – Place the dough balls onto the prepared baking sheets, spacing them apart. Gently flatten each one to about ¾-inch thick.
- Bake – Bake for 8-10 minutes, or until the edges turn a light golden brown.
- Cool the Cookies – Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
