Description
This fresh Peach Berry Fruit Salad combines peaches, berries, mint, and a honey-lime dressing for a colorful and refreshing summer dish.
Ingredients
Salad:
- 2 peaches or nectarines, sliced or diced (about 2 cups)
- 2 cups strawberries, halved or sliced
- 1 cup blackberries
- 1 cup blueberries
- 2 tablespoons fresh mint, finely sliced or minced
- 2 tablespoons fresh lime juice (about one lime)
- 1 teaspoon honey or agave
Dressing:
- 2 tablespoons fresh lime juice
- 1 teaspoon honey or agave (dissolved in lime juice)
Instructions
Prep the Fruit
Wash all fruit under cold water and pat dry.
Slice or dice the peaches or nectarines into bite-sized pieces.
Halve or slice the strawberries.
Place the peaches, strawberries, blackberries, and blueberries into a large mixing bowl.
Add Fresh Mint
Finely slice or mince fresh mint leaves.
Sprinkle the mint evenly over the prepared fruit in the bowl.
Prepare the Dressing
In a small bowl, whisk together 2 tablespoons lime juice and 1 teaspoon honey or agave until fully dissolved and well combined.
Toss the Salad
Drizzle the lime-honey dressing over the fruit.
Gently toss with a large spoon or spatula, being careful not to mash the berries.
Serve immediately, or refrigerate for up to 2 hours to allow flavors to meld and salad to chill.
Notes
Blanching Peaches: If peeling is needed, blanch peaches for 30 seconds in boiling water; skins will peel off easily.
Adjusting Sweetness: Taste before adding extra honey; fruits may be sweet enough on their own.
