  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • For the Topping:
  • 1 cup strawberry pie filling or fresh chopped strawberries with 1 tsp sugar
  • Optional: extra graham cracker crumbs for garnish

Instructions

Step 1: Make the Crust In a small bowl, mix the crushed graham crackers, granulated sugar, and melted butter until the texture resembles wet sand. Spoon about 2 tablespoons of the mixture into the bottom of 6–8 small cups or jars. Press down gently with a spoon or tamper. Set aside.

Step 2: Prepare the Cheesecake Filling In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract using a hand mixer until smooth and fluffy (about 2–3 minutes).

Step 3: Whip the Cream In a separate chilled bowl, whip the heavy cream until stiff peaks form (3–5 minutes). Use a hand mixer or stand mixer on high speed.

Step 4: Combine Gently fold the whipped cream into the cream cheese mixture using a spatula. Do not overmix—fold until combined and smooth.

Step 5: Layer the Cheesecake Spoon or pipe the cheesecake filling evenly into the prepared cups, over the graham cracker crust layer.

Step 6: Add Strawberry Topping Spoon a generous amount of strawberry pie filling or sweetened fresh strawberries on top of the cheesecake layer.

Step 7: Chill Cover and refrigerate for at least 1–2 hours before serving. This allows the flavors to meld and the filling to set.

Step 8: Garnish & Serve Before serving, sprinkle with extra graham cracker crumbs if desired, or top with whipped cream or fresh mint for a decorative touch.
