  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups crushed graham crackers (or similar crust crumbs)

Instructions

  • Make sure the cream cheese is very soft (room temperature) so it mixes smoothly without lumps.
  • In a medium-sized bowl, beat the softened cream cheese until it’s smooth and creamy.
  • Add powdered sugar, creamy peanut butter, and vanilla extract into the bowl. Mix thoroughly, using electric mixer or hand mixer, until the mixture is uniform in color and texture—no streaks.
  • Fold in the crushed graham crackers gradually, so they’re evenly distributed throughout the cheesecake peanut butter mixture. The crumbs should help firm up the balls.
  • Once the mixture is well combined, use a small cookie scoop or tablespoon to portion out bites. Roll each portion between your palms into smooth balls.
  • Place the balls on a tray lined with parchment paper or wax paper.
  • Chill in the refrigerator for at least 1-2 hours until firm enough to hold shape.
  • Once chilled, serve cold.
