Description

This 3-Ingredient Pecan Log is a chewy, nutty, no-bake Southern treat made with vanilla wafers, sweetened condensed milk, and pecans!


Ingredients

  • 1 (11-ounce) box vanilla wafers
  • 1 (14-ounce) can sweetened condensed milk
  • 3 ½ cups finely chopped pecans *(Toasting optional, see notes)

  • Large mixing bowl
  • Wooden spoon or spatula
  • Wax paper or parchment paper
  • Knife for slicing

Instructions

Step 1: Crush the Vanilla Wafers

  1. Food Processor Method: Add the vanilla wafers to a food processor and pulse until finely crushed into crumbs.
  2. Manual Method: Place the wafers in a zip-top bag and crush them with a rolling pin until finely ground.

Step 2: Mix the Ingredients

  1. In a large mixing bowl, combine the crushed vanilla wafers, sweetened condensed milk, and chopped pecans.
  2. Stir with a wooden spoon until the mixture starts coming together.
  3. The mixture will be thick and sticky—if needed, use your hands to finish combining everything evenly.

Step 3: Shape the Logs

  1. Divide the mixture evenly in half.
  2. Place each portion onto a sheet of wax paper or parchment paper.
  3. Using your hands, press and roll each portion into a log shape, about 2 inches in diameter.
  4. Wrap tightly in wax paper and refrigerate for at least 2 hours until firm.

Step 4: Slice & Serve

 

  1. Once chilled, unwrap the pecan logs and slice into ¼-inch rounds.
  2. Arrange on a serving platter and enjoy!

Notes

  • For best results, use finely chopped pecans so they blend evenly into the mixture.
  • To prevent sticking, lightly grease your hands with butter when shaping the logs.
  • For a firmer texture, let the logs chill overnight before slicing.
