Pancake Batter:

  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • ¾ cup milk (dairy or plant-based)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 Tbsp melted butter or oil

For Cooking:

  • Butter or oil for greasing pan
  • Squeeze bottle or piping bag

Optional Toppings:

  • Maple syrup
  • Honey
  • Milk (for a cereal-style bowl)
  • Berries, banana slices, chocolate chips, sprinkles

Instructions

Make the batter: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix milk, egg, vanilla, and melted butter. Combine wet and dry until just mixed (don’t overmix).

Load the bottle: Pour batter into a clean squeeze bottle or piping bag with a small opening. This makes forming the mini pancakes easy and neat.

Heat the pan: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil.

Pipe the pancakes: Pipe tiny dots of batter—about the size of a nickel—onto the pan. Space them apart slightly.

Cook & flip: Cook for 30–45 seconds, until bubbles form and bottoms are golden. Flip gently with a spatula or toothpick. Cook another 30 seconds until done.

Serve: Pour your mini pancakes into a bowl and top however you like—with syrup, fruit, or a splash of milk for the full “cereal” vibe.

Notes

Batter should be thick enough to hold shape but not too stiff

Squeeze bottles give you the best control for neat, small dots
