No-bake key lime pie lush with layers of creamy lime pudding, whipped cream, and a buttery Golden Oreo crust—perfect for summer gatherings.
Ingredients
For the Crust:
- 20 ounces double stuffed Golden Oreos (family-sized package)
- ⅓ cup unsalted butter, melted
Filling:
- 16 ounces cream cheese, softened
- Two (3.4 oz) boxes instant vanilla pudding mix (6.8 ounces total)
- 5½ cups heavy whipping cream, divided
- 1 cup key lime juice (fresh or bottled)
- ½ cup powdered sugar
- Zest of 1 lime
Instructions
Step 1: Make the Crust
In a food processor, pulse the Golden Oreos (cream included) until finely crushed.
Pour in ⅓ cup melted butter and pulse again until crumbs are evenly moistened.
Press the mixture firmly into the bottom of a 9×13-inch pan to form a smooth crust.
Place in the refrigerator to chill while you prepare the next layers.
Prepare the Pudding Layer
In a large bowl, combine the vanilla pudding mixes with 1 cup key lime juice and 3 cups of the heavy whipping cream.
Whisk vigorously for 2–3 minutes until thickened.
Place the bowl in the refrigerator to chill and continue setting.
Make the Cream Cheese Layer
In another bowl, beat together the softened cream cheese, ½ cup powdered sugar, and zest of 1 lime until smooth and creamy.
Add 1 cup of the remaining heavy whipping cream and beat again until fluffy.
Make Whipped Cream Topping
In a chilled mixing bowl, beat the remaining 1½ cups of heavy whipping cream until soft peaks form.
Add 1–2 tablespoons powdered sugar if desired to sweeten. Beat to stiff peaks.
Assemble the Layers
Crust – Already set in the pan.
Cream Cheese Layer – Spread evenly over the crust using a spatula.
Pudding Layer – Pour the lime pudding mixture over the cream cheese layer and smooth out.
Whipped Topping – Gently spread the whipped cream across the top.
Garnish – Top with additional lime zest, cookie crumbs, or lime slices for decoration.
Chill or Freeze
Refrigerate the assembled dessert for at least 4 hours, or overnight for best results.
For a frozen dessert, place in the freezer for 2–4 hours, then let soften slightly before serving.
Notes
Use fresh-squeezed key lime juice if possible for the brightest flavor.
Make sure all ingredients are well chilled before assembling for the best consistency.
The dessert slices best after an overnight chill.
