Description

These Southern-style honey butter cornbread poppers are golden, crispy, and brushed with sweet honey butter—perfect as a snack, side, or appetizer!

For the Cornbread Poppers:

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • 1/2 cup sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1/4 cup honey

  • 1/2 cup butter, melted

  • 2 eggs

For the Honey Butter Glaze:

  • 2 tablespoons butter, melted

  • 1 tablespoon honey


Instructions

Step 1: Preheat and Prepare

Preheat your oven to 400°F (200°C). Grease a mini muffin pan with non-stick spray or butter to prevent sticking.

Step 2: Mix the Dry Ingredients

In a large mixing bowl, whisk together:

  • Cornmeal

  • Flour

  • Sugar

  • Baking powder

  • Salt

Mix until evenly combined.

Step 3: Prepare the Wet Ingredients

In a separate bowl, whisk together:

  • Milk

  • Honey

  • Melted butter

  • Eggs

Make sure the mixture is smooth and well incorporated.

Step 4: Combine Wet and Dry Ingredients

Slowly pour the wet ingredients into the dry ingredients while stirring. Do not overmix—stir just until combined. Overmixing can make the cornbread poppers dense.

Step 5: Fill the Mini Muffin Pan

Using a spoon or small scoop, fill each mini muffin cup about ¾ full. This allows room for the batter to rise.

Step 6: Bake

Place the pan in the preheated oven and bake for 12-15 minutes or until:

✔️ A toothpick inserted in the center comes out clean

Step 7: Brush with Honey Butter Glaze

While the poppers are still warm, mix the melted butter and honey for the glaze.
