Description

Bright green, chewy Grinch sugar cookies with crisp edges, soft centers, and a red heart sprinkle—easy to make, no chilling required!


Ingredients

  • 1 stick (4 ounces/8 tablespoons) unsalted butter
  • ⅔ cup granulated sugar, plus extra for rolling
  • 2 large egg yolks (no egg whites!)
  • 1 teaspoon vanilla extract
  • 35 drops green food gel coloring
  • 1 ¼ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon fine salt
  • 12 red heart sprinkles

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper (or a silicone baking mat).
  • Melt the butter in a microwave-safe mixing bowl. Let it cool slightly.
  • Make the dough base: Stir in the granulated sugar, then add the two egg yolks and vanilla extract. Mix until well combined.
  • Add food coloring: Stir in 3–5 drops of green gel food coloring, adjusting until you reach your desired Grinchy shade of green.
  • Incorporate dry ingredients: Sprinkle the flour, baking soda, and salt evenly over the wet mixture. Stir until the dough is fully combined and smooth.
  • Divide the dough: Flatten the dough in the bowl and visually divide it into two halves. From each half, scoop 6 dough balls for a total of 12 cookies.
  • Roll & coat: Roll each dough ball between your palms, then roll in a small dish of granulated sugar to coat.
  • Bake: Arrange the cookies evenly on the prepared baking sheet, leaving space to spread. Bake for 10–11 minutes, until the tops are set and starting to crack.
  • Add heart sprinkles: Immediately after removing the cookies from the oven, gently press one red heart sprinkle into the top of each cookie. Do this while they’re still hot so the sprinkle sticks.
  • Cool: Let cookies rest on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

  • Only use egg yolks—egg whites will change the texture.
