2 TBSP of butter

1/2 tsp each of salt and pepper

1 tsp each of paprika, onion powder, and Italian seasoning

2 TBSP minced garlic

1 cup of shredded mozzarella cheese


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Potatoes: Wash and cut the potatoes into small cubes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until evenly coated. Spread the potatoes in a single layer on a baking sheet or oven-safe skillet.

  3. Season the Chicken: In a small bowl, mix salt, pepper, paprika, onion powder, and Italian seasoning. Rub this seasoning mixture evenly over both chicken breasts.

  4. Cook the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant. Place the seasoned chicken breasts in the skillet and sear for 3–4 minutes on each side until golden brown.

  5. Combine Chicken and Potatoes: Transfer the seared chicken breasts to the baking sheet or skillet with the potatoes, placing them in the center. Drizzle the Buffalo Wild Wings Garlic Parmesan Sauce over the chicken and potatoes.

  6. Bake: Place the baking sheet or skillet in the preheated oven and bake for 25–30 minutes, or until the chicken is cooked through and the potatoes are tender and crispy.

  7. Add Cheese: Remove the dish from the oven and sprinkle 1 cup of shredded mozzarella cheese over the chicken. Return to the oven for 2–3 minutes, or until the cheese is melted and bubbly.
