Golden-fried brioche sandwiches with cream cheese, strawberries, and preserves—perfect for brunch or dessert in under 20 minutes.
Ingredients
For the sandwich base
- 8 thick slices of brioche or challah bread
- 2 tablespoons butter, for the pan

- 4 ounces cream cheese, left out to soften
- 2 tablespoons powdered sugar, plus extra for the final touch
- 1/2 cup fresh strawberries, cut into thin slices
- 1/4 cup strawberry preserves

Instructions
Make the Filling
In a small bowl, mix the softened cream cheese and powdered sugar until smooth, fluffy, and lump-free. Let it sit at room temperature to ensure spreadability.
Assemble the Sandwiches
Lay out 4 slices of brioche. Spread a thick layer of the cream cheese mixture on each slice—leave a small margin around the edges. Top with a layer of fresh sliced strawberries, then spoon about 1 tablespoon of strawberry preserves over each. Place the remaining bread slices on top to form sandwiches. Press down gently to seal.
Prepare the Coating
In a shallow dish, beat together the eggs and whole milk to make a smooth batter. This mixture gives the sandwiches their golden French-toast-style coating.
Dip the Sandwiches
Dip each sandwich into the egg mixture, allowing it to soak for about 10 seconds per side. Make sure the edges are coated too.
Fry the Sandwiches
Heat 1 tablespoon of butter in a non-stick skillet over medium heat until it begins to bubble. Carefully place two sandwiches in the pan. Cook each side for about 2–3 minutes, or until golden brown and crisp. Repeat with the remaining sandwiches, adding more butter to the pan as needed.
Finish and Serve
Transfer the fried sandwiches to a paper towel-lined plate to drain excess butter. While still warm, dust with powdered sugar using a fine mesh strainer. Serve immediately for best texture and flavor.
Notes
Lightly toasting very fresh bread before assembling helps it hold up better.
Use a shallow pie dish for easy sandwich dipping.
Make sure the pan is at medium heat—too hot and the bread burns before the filling warms.
