Easy French Dip Sliders Recipe for Dinner —juicy roast beef, melty cheese, and caramelized onions in soft rolls, baked to perfection and served with au jus for dipping.
Ingredients
- 3 tablespoons unsalted butter
- 1 medium onion, thinly sliced
- 2 teaspoons fresh thyme, minced
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 12 sweet rolls
- 10 slices provolone cheese
- 14 ounces sliced deli roast beef
- ½ cup unsalted butter, melted
- 1 ½ tablespoons dried onion soup mix
- 1 packet au jus gravy mix
- 3 cups water
- Fresh chopped parsley for garnish (optional)
Instructions
Step 1: Caramelize the Onions

In a large skillet over medium heat, melt 3 tablespoons of butter.

Add the thinly sliced onions, stirring occasionally for 12-15 minutes, until they become soft and golden brown.

Stir in 2 teaspoons of fresh thyme, salt, and pepper. Mix well, remove from heat, and set aside.
Step 2: Prepare the Rolls

Preheat your oven to 350°F (175°C).

Keeping the rolls intact, slice them horizontally in half using a large knife.

Place the bottom half of the rolls into an 11×7 baking dish, cut side up.
Step 3: Assemble the Sliders

Layer half of the provolone cheese on top of the rolls.

Add the sliced roast beef evenly over the cheese.

Spread the caramelized onions over the roast beef.

Add the remaining slices of provolone cheese on top.

Place the top half of the rolls back onto the sliders.
Step 4: Prepare the Butter Sauce

In a small bowl, mix ½ cup melted butter with 1 ½ tablespoons dried onion soup mix.

Brush this mixture evenly over the tops of the rolls. (Alternatively, you can pour it over the top.)
Step 5: Bake the Sliders

Cover the dish loosely with foil (ensuring it doesn’t touch the rolls).

Bake for 25 minutes, then remove the foil and bake for an additional 5 minutes until the tops are golden brown.
Step 6: Prepare the Au Jus

While the sliders are baking, prepare the au jus according to the package instructions by mixing it with 3 cups of water and heating until warm.
Step 7: Serve

Once baked, garnish the sliders with fresh parsley (if using).

Serve hot with a side of au jus for dipping.
Notes
You can substitute leftover pot roast for deli roast beef.
Hawaiian rolls are recommended for a slightly sweet contrast, but any soft slider buns work.
For a richer dipping sauce, use beef broth instead of water when making the au jus.
