Description
Hearty and easy crockpot chili packed with beef, beans, and spices. Dump, stir, and let the slow cooker do the work for a comforting one-pot meal.
Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 (15 oz) can kidney beans (drained and rinsed)
- 1 (15 oz) can black beans (drained and rinsed)
- 1 (15 oz) can diced tomatoes (with juices)
- 1 (15 oz) can tomato sauce
- 2 tbsp tomato paste
- 1 (4 oz) can diced green chilies
- 1 ½ tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground cayenne pepper (optional for heat)
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 cup beef broth (or water)
Instructions
Brown the Meat
In a large skillet over medium heat, cook the ground beef along with the diced onion and minced garlic.
Stir and break the meat into small pieces, cooking until browned and onions are translucent (about 5–7 minutes).
Drain excess grease and transfer the mixture to the crockpot.
Add Remaining Ingredients
Add the drained kidney beans, black beans, diced tomatoes, tomato sauce, tomato paste, and green chilies into the crockpot.
Stir in the chili powder, cumin, smoked paprika, cayenne (if using), salt, pepper, and beef broth.
Mix thoroughly to ensure everything is evenly combined.
Cook the Chili
Cover the crockpot and cook:
On LOW for 6–8 hours
Or on HIGH for 3–4 hours
Stir occasionally if possible.
If chili becomes too thick, stir in extra broth or water to reach desired consistency.
Serve
Once cooked, serve hot with your favorite toppings such as cheese, sour cream, or tortilla chips.
Notes
Browning the beef adds richer flavor, but you can skip it for a true dump-and-go meal.
Adjust seasoning before serving—chili often develops flavor the longer it rests.
To thicken: simmer uncovered during the last 30 minutes or stir in 1 tbsp cornmeal.
