Wet Ingredients:
- ½ cup applesauce (130g)
- 1 egg
- ½ cup milk (120ml)
- ¼ cup oil (60ml)

- 1 teaspoon cinnamon
- 1 cup self-raising flour (150g)

- 1 medium apple, grated
Instructions
Step 1: Preheat & Prepare
- Preheat the oven to 375°F (190°C).
- Line a muffin tin with liners or lightly grease it with oil.
Step 2: Mix the Ingredients
- In a large mixing bowl, whisk together applesauce, egg, milk, and oil until smooth.
- Add in cinnamon and self-raising flour. Stir gently until just combined—don’t overmix!
- Fold in the grated apple, making sure it’s evenly distributed.
Step 3: Fill & Bake
- Divide the batter evenly into the muffin tin, filling each cup about ¾ full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Step 4: Cool & Serve
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Self-raising flour contains baking powder – no need to add extra!
- Grated apple adds moisture, making these muffins soft and tender.
- Avoid overmixing to keep the muffins light and fluffy.
