Ingredients

For the Casserole:
14 ounce “party size” bag of Nacho Cheese Doritos
1½-2 pounds ground beef
1 (10¾ ounce) can of cheddar cheese soup
1 (10¾ ounce) can of cream of chicken soup
1 (12 ounce) can of evaporated milk
1 (4 ounce) can of diced green chilies
2-3 cups shredded Mexican cheese
1 packet taco seasoning (optional)

Additional Topping Options:
Sour cream
Diced green onion
Sliced cherry tomatoes
Sliced avocado or guacamole
Salsa


Instructions

Preheat Oven
Preheat your oven to 350°F (175°C).

  1. Prepare the Meat Mixture
    In a large pan over medium heat, cook the ground beef until fully browned. Drain excess fat. If using, stir in the taco seasoning.
  2. Create the Cheese Sauce
    To the pan with beef, add the cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies. Stir everything together and continue to cook over medium heat until the mixture becomes hot and bubbly.
  3. Layer the Casserole – First Half
    Lightly spray a 9×13-inch baking dish with non-stick spray.
    Spread half of the Doritos (lightly crumbled—not too small) across the bottom.
    Scoop half of the meat and cheese mixture over the chips.
    Sprinkle 1 cup (or more as desired) of shredded Mexican cheese over the meat.
  4. Layer the Casserole – Second Half
    Add another layer using the remaining Doritos (again, lightly crushed), the rest of the meat mixture, and top with the remaining cheese.
  5. Bake
    Place the casserole in the oven and bake for about 20 minutes or until the cheese is melted and the dish is heated through.
  6. Serve with Toppings
    Once out of the oven, garnish with your favorite toppings such as sour cream, diced green onions, cherry tomatoes, avocado, or salsa.

Notes

If using taco seasoning, add it while the meat is cooking for a richer flavor.
