Description

Savory breakfast casserole made with crescent rolls, eggs, sausage, and cheese. Easy to prep ahead and perfect for family breakfast or brunch.

Ingredients

Scale
  • 1 (8-ounce) package refrigerated crescent rolls
  • 1 pound breakfast sausage
  • 8 large eggs
  • 1 ¼ cups milk (2% recommended)
  • ¾ teaspoon Kosher salt (or ½ teaspoon table salt)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • 1/21 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese (can substitute with cheddar or mozzarella)

Instructions

Step 1: Preheat and Prepare the Pan

Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish with nonstick spray or butter.

Step 2: Brown the Sausage

In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it into crumbles as it cooks.
Drain off any excess grease and set aside.

Step 3: Prepare the Crescent Roll Base

Unroll the crescent roll dough and press it into the bottom of the prepared baking dish.
Pinch the seams together to form a single, even layer of dough across the bottom of the dish.

Step 4: Add the Sausage Layer

Evenly spread the cooked sausage over the crescent roll dough.

Step 5: Mix the Egg Filling

In a medium bowl, whisk together the eggs, milk, salt, garlic powder, and black pepper until fully combined.

Step 6: Assemble the Casserole

Sprinkle the cheddar and Monterey Jack cheese evenly over the sausage layer.
Pour the egg mixture carefully over the top, making sure to distribute it evenly without disturbing the layers.

Step 7: Bake

Bake uncovered for 35 to 45 minutes, or until the casserole is set in the center and golden on top.
To check for doneness, insert a knife into the center—if it comes out clean, it’s ready.

Step 8: Rest and Serve

Allow the casserole to rest for 5–10 minutes before slicing and serving.
This makes it easier to cut and enhances the flavor.

Notes

  • Crescent dough may puff during baking; letting it rest post-bake helps it settle.
  • For an extra golden top, add a bit more shredded cheese in the last 5 minutes of baking.
  • Make sure the sausage is fully drained to prevent sogginess.
