Ingredients

8 ounces uncooked pasta (linguine recommended)

1 tablespoon butter

1 teaspoon flour

2-3 cloves garlic, minced

1/4 cup chicken broth
-
1 cup heavy/whipping cream

1/3 cup freshly grated parmesan cheese

Salt & pepper, to taste

Chopped fresh parsley (optional garnish)
Instructions
Step 1: Cook Pasta

Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente.

Reserve 1/4 cup pasta water, then drain.
Step 2: Make the Sauce

While pasta cooks, melt butter in a large skillet over medium heat.

Whisk in flour and cook for 30 seconds to make a roux (don’t let it brown).

Add minced garlic and sauté for 30 seconds until fragrant but not browned.

Pour in chicken broth, scraping up any browned bits. Simmer for 1 minute.

Reduce heat to low. Slowly whisk in heavy cream until smooth.
Step 3: Combine & Finish

Add drained pasta to the skillet, tossing to coat in sauce.

Sprinkle in parmesan cheese, stirring constantly until melted and creamy (1-2 minutes).

If needed, add reserved pasta water 1 tbsp at a time to loosen sauce.

Season with salt and pepper to taste.
Step 4: Serve

Divide among bowls and garnish with parsley and extra parmesan if desired.
Notes
Pasta choice: Linguine or fettuccine work best to hold the creamy sauce.
Fresh parmesan: Pre-grated won’t melt as smoothly.
