Description

These Churro Cheesecake Donut Cookies are soft, spiced, and coated in cinnamon sugar—an irresistible blend of churros, cheesecake, and donuts!


Ingredients

  • 1½ cups all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ½ cup granulated sugar

  • ¼ cup brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup cream cheese, softened

Cinnamon-Sugar Coating:

  • ¼ cup granulated sugar

  • 1 tbsp ground cinnamon


Instructions

Step 1: Prepare for Baking

  1. Preheat your oven to 350°F (175°C).

  2. Line a baking sheet with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together:

    • Flour

    • Baking powder

    • Salt

  2. Set aside.

Step 3: Cream the Butter and Sugars

  1. In a large mixing bowl, beat together:

    • Butter

    • Granulated sugar

    • Brown sugar

  2. Mix until the texture is light and fluffy (about 2 minutes).

Step 4: Add Wet Ingredients

  1. Add egg and vanilla extract, mixing until fully incorporated.

  2. Blend in softened cream cheese until smooth and creamy.

Step 5: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture.

  2. Mix until just combined—do not overmix.

Step 6: Form the Cookies

  1. Scoop dough using a tablespoon or cookie scoop onto the prepared baking sheet.

  2. Space the cookies about 2 inches apart.

Step 7: Bake the Cookies

  1. Place in the preheated oven and bake for 12–15 minutes, until the edges are lightly golden.

  2. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Step 8: Coat in Cinnamon Sugar

  1. While cookies are still warm, mix granulated sugar and cinnamon in a small bowl.

  2. Roll each cookie in the mixture until fully coated.

Optional: Add a Cream Cheese Glaze

 

  1. Mix ¼ cup cream cheese, 2 tbsp milk, and ½ cup powdered sugar until smooth.

  2. Drizzle over cookies for an extra indulgent touch.

Notes

Best enjoyed fresh! These cookies taste amazing warm, right after baking.

For a more churro-like texture, roll the cookies twice in the cinnamon sugar mixture.
