In a medium bowl, beat cream cheese, 1/4 cup sugar, and 1 teaspoon vanilla until smooth. Set aside.

Make the Cookie Dough:
In a large bowl, cream together softened butter, 1 cup sugar, and 1 cup brown sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in 2 teaspoons vanilla. Gradually mix in flour, baking soda, and salt until just combined. Fold in chocolate chips.

Assemble the Cookies:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Scoop a tablespoon of cookie dough, flatten it slightly, and add a teaspoon of cheesecake filling to the center.
Flatten another tablespoon of cookie dough and place it on top of the filling, sealing the edges.

Bake the Cookies:
Place filled cookies on the prepared baking sheets, leaving 2 inches of space between each.
Bake for 12-15 minutes until edges are golden brown and centers are set.
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
