Instructions

  1. Preheat the Oven

    • Set your oven to 350°F (175°C).
    • Line two baking sheets with parchment paper or silicone baking mats.
  2. Prepare the Dough

    • In a large mixing bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
    • Add the egg yolk, corn syrup, vanilla extract, and maple extract. Mix well, scraping down the sides of the bowl as needed.
  3. Mix the Dry Ingredients

    • In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt until well combined.
    • Gradually add the dry ingredients into the wet mixture, stirring until a soft dough forms.
  4. Shape the Cookies

    • Scoop out dough and roll into 1.5-inch balls.
    • Roll each dough ball in the 1/4 cup sugar until fully coated.
    • Place the cookie dough balls 2 inches apart on the prepared baking sheets.
  5. Bake

    • Bake at 350°F (175°C) for 10-12 minutes, or until the edges are set and lightly golden.
    • The centers will be very soft when removed from the oven, so let them rest on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.
