			- 1/2 cup butter
- 1/3 cup sugar
- 1/2 cup brown sugar
- 1 large egg yolk
- 1/2 cup light corn syrup
- 2 teaspoons vanilla extract
- 2 teaspoons maple extract
- 2 1/3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup sugar (for rolling)
Instructions
- 
Preheat the Oven - Set your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or silicone baking mats.
 
- 
Prepare the Dough - In a large mixing bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
- Add the egg yolk, corn syrup, vanilla extract, and maple extract. Mix well, scraping down the sides of the bowl as needed.

Mix the Dry Ingredients - In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt until well combined.
- Gradually add the dry ingredients into the wet mixture, stirring until a soft dough forms.

Shape the Cookies - Scoop out dough and roll into 1.5-inch balls.
- Roll each dough ball in the 1/4 cup sugar until fully coated.
- Place the cookie dough balls 2 inches apart on the prepared baking sheets.

Bake - Bake at 350°F (175°C) for 10-12 minutes, or until the edges are set and lightly golden.
- The centers will be very soft when removed from the oven, so let them rest on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.
