Ingredients

  • 2 cups uncooked pasta (e.g., shells or penne)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 ½ cups shredded cheddar cheese
  • ½ cup cream or milk
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional toppings: chopped cilantro, diced tomatoes, sour cream

Instructions

Cook the Pasta

Bring a large pot of salted water to a boil.

Cook the pasta according to package instructions until al dente.

Drain and set aside.

Brown the Ground Beef

In a large skillet, heat 1 tablespoon olive oil over medium heat.

Add the ground beef, breaking it apart with a spatula as it cooks.

Cook until browned and no longer pink, about 6–8 minutes.

Drain excess fat from the skillet.

Season and Add Salsa

Return the cooked beef to the skillet.

Add the taco seasoning and 1 cup salsa.

Combine and Melt the Cheese

Reduce the heat to low. Add the cooked pasta into the skillet with the beef.

Stir in the cream or milk and shredded cheddar cheese.

Mix until the cheese is fully melted and the pasta is coated in a creamy, cheesy sauce.

Final Seasoning and Serve

Season with salt and pepper to taste.

Serve hot, garnished with optional toppings like chopped cilantro, diced tomatoes, or sour cream.

Notes

Use shells, penne, rotini, or bowtie pasta—any shape that holds sauce well.

The dish thickens slightly as it cools; add a splash of milk when reheating.
