Moist and spiced Carrot Cake Bars with crushed pineapple and cream cheese frosting—an easy, crowd-pleasing dessert perfect for any occasion!
Ingredients
For the Cake:
Group One:

1¼ cups unsweetened applesauce or oil (Nana used oil!)

2 cups sugar

3 large eggs
Group Two:

2 cups all-purpose flour

1 teaspoon baking soda

1½ teaspoons baking powder

½ teaspoon salt

1 teaspoon cinnamon
Group Three:

2 cups grated carrots
-
1 cup shredded sweetened coconut

1 cup chopped nuts (optional)

1 teaspoon vanilla extract

1 cup crushed pineapple (not drained; use pineapple in juice, not syrup!)
For the Cream Cheese Frosting:

½ cup butter, softened
-
8 oz cream cheese, softened
-
1 teaspoon vanilla extract

1 lb powdered sugar
Instructions
Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C).

Lightly grease or line a 10×15-inch jelly roll pan with parchment paper.
Step 2: Prepare the Cake Batter

In a large mixing bowl, whisk together Group One ingredients (applesauce or oil, sugar, eggs) until smooth.

Add Group Two ingredients (flour, baking soda, baking powder, salt, cinnamon) to the wet mixture. Mix until just combined.

Stir in Group Three ingredients (grated carrots, coconut, nuts, vanilla, and crushed pineapple). Do not overmix!
Step 3: Bake the Cake

Pour the batter into the prepared jelly roll pan.

Spread evenly with a spatula to ensure an even bake.

Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Let cool completely before frosting.
Step 4: Make the Cream Cheese Frosting

In a large mixing bowl, beat butter and cream cheese together until light and fluffy (about 3 minutes).

Add vanilla extract and mix to combine.

Gradually add powdered sugar, beating on low speed until smooth.
Step 5: Frost and Serve

Spread the cream cheese frosting evenly over the cooled cake bars.

Slice into 36 bars and serve immediately.
Notes
Pineapple juice keeps it moist – Don’t drain the crushed pineapple!
Use a hand or stand mixer for smooth, lump-free frosting.
Best enjoyed fresh – These bars taste even better the next day!
