Cheesy carnivore pizza muffins packed with protein, ready in 30 minutes—perfect keto snack or meal prep with no carbs!
Ingredients
- 8 large eggs
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 cup ground chicken (cooked) or substitute with beef or sausage
- 12 slices pepperoni, chopped
- 1/4 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp Italian Seasoning
- 1 tsp garlic powder
- 1/4 cup bacon, cooked and crumbled (optional, for extra flavor)
Instructions
Preheat and Prepare
Preheat your oven to 375°F (190°C). Generously grease a 12-cup muffin tin using butter, olive oil, or a non-stick spray.
Mix Eggs and Cream
In a large bowl, crack the 8 eggs and add 1/4 cup of heavy cream. Whisk thoroughly until fully combined and slightly frothy.
Add Cheese, Meats, and Seasonings
Add the shredded mozzarella and grated parmesan. Stir in the cooked ground chicken (or alternative), chopped pepperoni, and optional crumbled bacon. Season the mixture with salt, pepper, Italian seasoning, and garlic powder. Stir gently until everything is evenly distributed.
Fill the Muffin Tin
Using a spoon or scoop, evenly divide the mixture between the muffin cups, filling each about ¾ full.
Bake
Place in the oven and bake for 18–22 minutes, or until the muffins are firm to the touch and slightly golden on top.
Cool and Serve
Allow the muffins to cool in the tin for 5 minutes before transferring to a cooling rack. Serve warm or store for later.
Notes
Muffins will firm as they cool; don’t overbake.
