Description

A spicy, creamy, low-carb buffalo chicken casserole with cauliflower, ranch dressing, and melted cheese. Perfect for keto diets and easy weeknight dinners.

Ingredients

Scale
  • 1 large head of cauliflower, cut into florets
  • 2 cups cooked chicken breast, shredded
  • 1 cup buffalo sauce (adjust to taste)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 green onions, chopped
  • Salt and pepper to taste
  • Fresh parsley or chives, chopped, for garnish (optional)

Instructions

Preheat and Prep

Preheat your oven to 400°F (200°C).

Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.

Prepare the Cauliflower

Steam or blanch the cauliflower florets for 5–7 minutes until just tender.

Drain and pat dry with paper towels to remove excess moisture. Set aside.

Mix the Filling

In a large mixing bowl, combine the shredded chicken, buffalo sauce, and ranch or blue cheese dressing. Stir to coat evenly.

Add the steamed cauliflower and toss everything together.

Season with salt and pepper to taste.

Assemble the Casserole

Pour the cauliflower and chicken mixture into the prepared baking dish.

Sprinkle the shredded cheddar and mozzarella cheese evenly on top.

Bake

Bake in the preheated oven for 20–25 minutes, or until the casserole is bubbly and the cheese is golden brown.

Garnish and Serve

Remove from the oven and top with chopped green onions and optional fresh parsley or chives.

Serve hot and enjoy the spicy, creamy goodness!

Notes

Blanching the cauliflower is optional but helps prevent a watery casserole.

For a smoother texture, you can mash the cauliflower slightly before mixing.

If using blue cheese dressing, reduce salt slightly due to its salty profile.

Let the casserole rest for a few minutes after baking to thicken slightly.
