Description

These Apple Pie Enchiladas are an easy dessert recipe combining the warm flavors of cinnamon-spiced apple pie filling wrapped in flour tortillas, baked to perfection, and drizzled with a sweet sugar sauce. Perfect for a quick, handheld treat or a crowd-pleasing party dessert!

Ingredients

Scale
  • 1 (21-ounce) can apple pie filling (or homemade apple pie filling)
  • 6 (8-inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.

  2. Prepare the Tortillas:
Lay out the flour tortillas on a clean surface. Spoon an equal amount of apple pie filling (about 1/3 cup) onto the center of each tortilla. Sprinkle a pinch of cinnamon over the filling.

  3. Roll the Enchiladas:
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to create a cylinder. Place the rolled tortillas seam-side down in the prepared baking dish.

  4. Make the Sauce:
In a medium saucepan, melt the butter over medium heat. Add the white sugar, brown sugar, and water. Stir continuously until the sugars dissolve and the mixture comes to a gentle boil. Remove from heat.

  5. Assemble and Bake:
Pour the warm sugar sauce evenly over the rolled tortillas in the baking dish. Make sure each enchilada is well-coated. Bake in the preheated oven for 20-25 minutes, or until the tortillas are golden brown and the sauce is bubbly.

  6. Cool and Serve:
Remove the dish from the oven and let it cool for 5-10 minutes. Serve warm, optionally topped with a scoop of vanilla ice cream or a drizzle of caramel sauce.

Notes

  • If the tortillas are too stiff to roll, warm them in the microwave for 10-15 seconds to make them more pliable.
  • For a crispier texture, broil the enchiladas for 1-2 minutes at the end of baking.
